I LOVE to experiment with healthy ingredients and let my kids try, they can be VERY picky. This weekend will be 4th of July, which is crazy to me because we were JUST entering June and NOW we’re entering July…CRAZY?! Anyway… If you’ve been following me on Instagram I showed that I got my wisdom teeth taken out and how wonderful my children were in helping me rest. It has been a week and I am still resting and healing, my teeth still bother me, i’m going to give it a few more days and see how everything goes, I’ve been on bed rest, eating mashed potatoes, surbert, popsicles and crushed pineapples to get me through the day. I’ve also limit my exercising because of it but I’ve been iching to go back to working out.
So for those this weekend, you are looking for healthy recipes for your 4th of July. Here is some, I’ve put together before my surgery.
Low Carb and Calorie Protein Chocolate and Vanilla Filling, Berry pancakes
So, this recipe was inspired by a few things:
My Love for protein pancakes,
My Love for chocolate,
My Love for coconuts,
I ran out of make syrup,
I ran out of vanilla extract and
I ran out of Almond milk.
The vanilla protein from nogii which made up for the missing ingredients I usually use and instead of milk, I used water, these came out AMAZING!!!!!! My only complaint is that I didn’t use enough chocolate filling in between my pancakes!
-2 scoops Protein Powder
-2 eggs (1 whole, 1 egg whites)
Chocolate & Vanilla Filling:
-2 scoops of protein
-1/2 cups of yogurt (I used no sugar coconut yogurt)
– For Vanilla (Use vanilla protein and 1 tsp of vanilla extract)
– For Chocolate (Use Cacao powder)
Finish with berries of choice, combine chocolate and/or vanilla filling
-Spray or use oil of choice (I used coconut oil)
-Combine pancake ingredients and pour in pan like regular pancake mix
-Once batter is finished, plate first pancake use filling,
-Next pancake on top use the next filling of choice until done.
Talpia berry kale fruit salad with protein dressing
My kids and I had a WONDERFUL dinner, with a simple kale, cucumber and berry salad, I made with a delicious PROTEIN Salad dressing! Kid approved! This Amazing salad dressing is made with
Recipe for Salad and Dressing:
-You can use any type of greens you like (Spinach, Chard, Kale, etc.)
– Any kind of berries
PROTEIN Salad dressing:
MRM greens protein,
unsweetened coconut yogurt,
mrs.dash garlic seasoning,
white wine vinegar,
salt & pepper!
Low carb angel berry cake with coconut whipped cream
Low Carb Angel Food Cake Recipe:
-7 room temp eggs fresh not from carton
-1 scoop of vanilla protein
-1 tsp of cream of tartar
-1 tsp of vanilla extract
-Stevia to taste
-Make sure eggs are room temp and preheat oven to 350 degrees
-Seperate egg whites and combine all ingredients except for protein
-Use mixer and mix on high for 3 to 5 minutes until high peaks.
-Sprinkle protein on top and fold together, DO NOT OVER MIX.
-Pour mixture in round pan for 20 minutes in oven
-Once done, top with favorite fruit and ENJOY!!!
Coconut whipped Cream Recipe:
-unsweetned coconut cream or Milk (Thais Kitchen is best to get the FULL FAT)
-Stevia to taste
-Vanilla Extract (optional)
-Chill coconut cream in fridage for 2 to 4 hours or overnight
-The next day, remove lid with can opener
-When you open can, There will be a seperation of the fat and coconut juice (Great for smoothies)
-Scoop out White fat in bowl
-Combine the rest of the ingredients
-Mix on high for 1 to 3 minutes
** Once you have all the ingredients made above, you can now layer your dessert:
-Start with angel food cake
-then berries of choice
-then whipped cream
-and start layering from there.
** It is your choice however you want to layer, go have fun with low calorie, yummy dessert!
Healthy Black Bean Brownie
Chocolate is my weakness, especially when I have a goal of trying to stay in shape and tone up. Here is a Black Bean Brownie recipe I came across from Mind over munch!
1 can black beans, drained and rinsed
2 Tbsp egg whites
1 Tbsp coconut oil
2 Tbsp almond butter
1/2 cup cocoa
1/4 tsp salt
1 tsp vanilla
2/3 cup stevia/Splenda (more or less to taste!)
1.5 tsp baking powder
mini dark chocolate chips (for topping), optional
1. Preheat oven to 350F
2. Combine all ingredients (except chips) in food processor.
3. Pour batter into 8in baking dish sprayed with cooking spray
4. Place chips on top
5. Bake 15-20 minutes (15 was perfect for mine)
**OPTIONAL** You can also top with Coconut Whipped Cream
This recipe yields 16 servings.
