Fall is here and that means crockpots get dusted and ready to use. Here in North Carolina, it still feels like summer but I’m ready for Fall. I’m ready for fall recipes (comfort food), warm clothes, and Thanksgiving! Let me share with you this delicious comfort food recipe to get you started with the Fall Season.

I LOVE a good dairy free, healthy and flavorful soup. I’m actually not a soup person unless I’m sick or my body just needs something hot and soothing. This recipe is it, and its easy to freeze!

How to make Pumpkin Curry Soup

Serves: 6 servings
1 (30-ounce) can pure pumpkin
2 tablespoons red curry paste (I use gluten-free)
1 (13.5-ounce) can full-fat coconut milk
4 cups chicken or vegetable broth
2 green onions, sliced (green parts only), for garnish (I used croutons)
Use a 6-quart slow cooker. Add the canned pumpkin to the insert, then the curry paste, coconut milk, and broth.
Cover and cook on Low for 5 to 6 hours or on High for about 3 hours.
Stir well and serve in a wide-mouthed bowl with a sprinkling of green onion slices.
The recipe had pumpkin seeds, I felt like it needed something hearty, not too much but just enough, So in the video, I put in garlic croutons in the soup, Just three and it was JUST Right for this soup. I feel like this soup, can be customized anywhere you like. Next time, I’m going to put in shredded chicken as the garnish.
This is one of those recipes I like to makes customizeable according to what I have on hand, the season, or mood I’m in. This recipe is VERY flavorful and creamy, healthy and perfect for the Fall season. Let me know in the comments below if you tried it.
