I’m always on the look out for easy recipes. Muffins are an easy go to breakfast meal for the family. I’m still in summer mode and I’m not ready for it to end. It’s back to school time which means Fall is right around the corner. I LOVE fall and all it has to offer with leaves changing color, cold weather, hot chocolate, Pumpkin Spice and everything else that comes with fall. I’m not ready for it. My babies (My soon to be 13-year-old teen twins= “My Tweens”) started 7th grade this year and I tried to take a picture but they didn’t let me. They ran away from me and finally told me no. I’m back at it again, working out. Getting my summer body back. While I’m working out and trying to get my summer body back, I’m on the hunt to finding healthy breakfast and snack ideas. Here I created a healthy muffin you can eat for breakfast and still stay on track. I have some leftover frozen cranberries. Whenever I make bread with cranberries I need to have orange juice with it, So I created Cranberry Orange Protein Muffins. I have tried these in the morning drinking Herbal coffee, during those busy days when you don’t have time to cook, I can pack these up and freeze them. Take one out and heat up and I’m on my way to start the day.
